Macadamia Nut Fudge

When you’re in need of some satisfaction, these delicious treats are here to hit the spot.  This guilt-free Macadamia Nut Fudge is easy to make and will definitely satisfy your sweet tooth. The most powerful ingredient in this recipe is the Raw Chocolate (Raw Cacao) powder.

Raw cacao is the highest source of antioxidants of any complete food ever discovered. Antioxidants = Anti-aging!

It’s also rich in magnesium, iron, chromium, and zinc which are all essential for regulating appetite and getting rid of excess weight. Plus raw chocolate contains the feel good hormone influencers like tryptophan and serotonin. So as you can see, the real RAW chocolate is where all of the secrets are at…. With nutrients like this in your system, you can’t help but feel good!

This recipe was provided by the AMAZING Raw Food Chef June Tate who prepared these treats for one of my book signing events. She was kind enough to share this recipe, so definitely take advantage and keep some of these treats on hand in your freezer for when you need them. Here’s the recipe:

Macadamia Mut Fudge

(Yields 14 pieces)

*2 tablespoons coconut oil , melted (add ½ tbsp more if too stiff )

*2/3 cup pitted dates

*1/3 cup seedless raisins/ cherries

*1/3 cup Macadamia

*Dash of cinnamon

*6 tablespoons of Raw Cacao powder or Raw Carob powder

Add all ingredients to a food processor, adding the cacao/carob after the other ingredients are processed together.

Continue to process until a ball forms. Remove from the processor and place in a mixing bowl.

Add chopped macadamia nuts and fold into the mixture.

Pinch small portions from the mixture to form small balls. Roll the ball in the palm of your hands until it sticks together. Place on a plate.

Make an indentation with your thumb in the center of the ball. Place a nut in the center. Place in a candy cup and freeze for 30 minutes.

Best when served right from the freezer.

    Hey, this looks delicious! I think the Macadamia nuts were accidentally omitted from the ingredient list though…

      Thanks Camronn! Your eye for detail is uncanny. I took the info directly from my chefs recipe. She actually implements different nuts (walnut, pecan, etc) in place of the mac nuts sometimes, so I’d imagine that this is why it didn’t show up in the recipe… Well, we went ahead and added it in above for convenience sake. Thanks again, and let me know when you make them!
